With an abundance of bananas in the house I made banana bread today
- 220 grams of Almonds
- 10 dates
Grind in a high powered blender – use the Thermomix 6 seconds on speed 6
- 3 bananas
- 30 grams of honey – I leave this out as the ripe bananas make it really sweet
- 60 grams of light olive oil
- 1 teaspoon of cinnamon and vanilla
- 1 teaspoon of baking soda
- 3 eggs
Mix until smooth – Thermomix 5 seconds on speed 5
Because this is so moist and often burns before it cooks through, I divide it into two loaf tins and bake for about 30 minutes at 180 degrees.
Today I also added two cups of fresh coconut that was left over from making coconut milk. But it is also great with sultanas and walnuts added.
Its such a quick recipe to whip up and is gluten free, dairy free and refined sugar free.
